3 Easy Meal Ideas for Busy Girls (and Guys!)
Sometimes the thought of cooking after a long day of school or work can be daunting, to say the least. And so, you grab your phone, order carryout, spend $20 that you didn’t have budgeted, and don’t feel very good after that cheeseburger. Here are a few of my favorite, easy meals that you can simply throw together (like seriously, you don’t even have to measure anything).
Rice Bowls
I love rice bowls. I tend to make them like taco bowls of some sort, but there are so many different toppings you can use! Here are some ideas:
Rice (note: I just use 5-min rice when I’m extra busy!), black beans, beef, jalapenos, sour cream or Greek yogurt, shredded cheese, and tortilla chip
Rice, chicken, avocado, salsa, onions, shredded cheese, and tortilla chips
Rice… and pasta sauce. Trust me on this one. Alfredo or red sauce works, and some parmesan cheese on top!
Rice, beef, broccoli, and coconut aminos (a great soy sauce replacement!)
Breakfast Bowls
I love breakfast food at all times of the day. Here are some breakfast bowl ideas that you can throw together in no time:
Mini potatoes (diced), sausage or kielbasa, and eggs
Hashbrowns, ham, eggs, and cheese
Home fries, bacon, spinach, eggs, avocado, and cheese
And of course it’s always fun to have some toast or a bagel on the side!
Loaded Baked Potatoes
I don’t know about you, but I love baked potatoes. Here are some topping ideas to really elevate this simple spud:
Cheese, sour cream (or Greek yogurt!), and bacon bits
Grilled chicken, cheese, and Greek yogurt
Taco stuff! Beef, corn, beans, onions, cheese, and Greek yogurt!
Chili and cheese! How easy is that?
